摘要: [目的]试验以浓缩杏浆为原料,经稀释、二次均质、喷雾干燥工序生产杏粉.[方法]采用单因素实验和正交实验研究进风温度、出风温度、雾化器转速、浆料可溶性固形物含量对杏粉的色泽、含水率、得率的影响.[结果]最终确定了杏粉最佳喷雾干燥工艺参数为:进风温度155℃,出风温度75℃,蠕动泵转速为29r/min,浆料可溶性固形物含量为11;时,所得杏粉的L值为69.35、b值为31.28、水分含量3.5;、集粉率56;.[结论]杏粉果香浓郁、色泽最佳.
