摘要: 研究了甜菜红素的理化性质及其在不同环境中的稳定性,结果表明:甜菜红素为水溶性色素,由多种物质组成.耐高温、耐氧化、耐还原能力较差,在酸性及中性环境中表现稳定,对自然光和紫外光较稳定.
