摘要: 果胶酶是一种用途广泛的酶,报道一株耐热性果胶酶产生菌及酶学特性的研究.经实验确定该菌株产生的果胶酶最适反应温度60℃,液体酶60℃保温1 h,酶活保存50;,最适反应pH 8.0,在pH4~10具有较好的酶活性.
