Effect of 1-MCP different treatment ways on the freshness preservation of Brassica Chinensis L.

    目的 探究1-MCP不同处理方式对上海青保鲜效果的影响。
    方法 本研究对强制冷风预冷后经1-MCP熏蒸处理(A组)与缓释作用(B组)的上海青进行贮藏,同时以未处理的上海青作为对照(CK组)。将上海青贮藏于6 ℃冷柜中,每隔3 d测定其外观、品质及衰老等相关指标的变化。
    结果 1-MCP处理相比于CK组能够显著抑制上海青失重率的上升,且贮藏第18 d,A组失重率较B组低2.01%;1-MCP处理通过抑制L*值、b*值的增加及叶绿素含量的下降,从而延缓了叶片黄化和感官劣变,且B组抑制效果优于A组;在品质方面,B组相比于其他2组,总体保持了较高的可溶性固形物、抗坏血酸及可溶性蛋白含量;此外,1-MCP缓释处理更有效的抑制了丙二醛含量及细胞膜通透性的增加,推迟了POD酶与CAT酶活性峰值到来,并抑制了贮藏后期POD活性的下降。
    结论 熏蒸处理在贮藏后期外观保持及抑制失重方面优于缓释作用,但后者总体保持了上海青低温贮藏期间较好的品质及抗氧化特性。

     

    Abstract:
    Objective This study aims to investigate the effect of different treatment ways of 1-methylcyclopropene (1-MCP) on the freshness preservation effect of Brassila Chinensis L.
    Methods After forced cold-air pre-cooling, Brassica Chinensis L. was stored with both 1-MCP fumigation treatment (Group A) and slow-release action (Group B), while untreated Brassica Chinensis L. was used as a control (Group CK). Brassica Chinensis L. was stored in a refrigerator at 6 ℃, the change of appearance, quality and aging indexes were measured every 3 days.
    Results The results showed that 1-MCP treatment significantly inhibited the increase of weight loss rate of Brassila Chinensis L. compared with CK group, and the weight loss rate of group A was 2.01% lower than that of group B at 18 d of storage. 1-MCP treatment can inhibited the increase of L*, b* values and decrease of the chlorophyll content during the storage period, thereby retarding the yellowing and deterioration of the leaf blades to a certain extent, and the inhibition effect of group B was better than that of group A. In terms of quality, Group B maintained a relatively higher content of soluble solids, ascorbic acid, and soluble proteins compared to the other two groups. In addition,1-MCP slow-release treatment inhibit the accumulation of malondialdehyde content and the increase of cell membrane permeability more effectively, delayed the arrival of activities peak of peroxidase and catalase, and inhibited the decline of POD activity in the late storage period.
    Conclusion 1-MCP fumigation treatment was superior to the slow release in maintaining appearance and suppressing weight loss during the late storage period, but the slow release maintained the better quality and antioxidant properties of Brassila Chinensis L. during low temperature storage.
